Our assistant chef, Andy St. Jean of Trafalgar, harvests a banana leaf from the Papillote Gardens.

Monday:
Pumpkin Soup
Tuna, Dolphin or Kawang (dragon style with citrus sauce), Roast Potatoes, marinated Vegetable salad.
Dessert: Fresh Fruit Sorbet

Tuesday: Creole Night
Callapump Soup
Creole Chicken or Fish with Plantain, Provisions, Eggplant and Green Papaya Salad
Dessert: Cake a la mode

Wednesday: BBQ Night Buffet
Grilled Ribs, Fish and Chicken with Baked Potato, Corn on the Cob, Pasta Salad and Carrot Salad.
Dessert: Orange Coconut

Thursday:
Callaloo Soup
Caribbean Beef (stewed in Papaya or Ginger) or Roast Fish in Lime Nut Crust with Roast Potato and Green Vegetables.
Dessert: Tarts

Friday:
Pumpkin Soup
Seafood Brochette or Crapaud (when in season) with Pasta, Vegetables and Tossed Salad.
Dessert: Lime Delight

Saturday:
Old-Fashioned Onion Soup
Papillote Fish Packets or Chicken Kiev with Roots Vegetable Salad
Dessert: Fruit Crumble

Sunday:
Callaloo Soup
Prawns in Garlic Sauce or Rabbit With Mashed Potatoes or Cush Cush and House Salad.
Dessert: Banana Flambé
